Phase 3 recipes
use ingredients that should only be
eaten occasionally or rarely, if at all.
Most of the turkey recipes I have are on the

and Soup pages.
Turkey a la King Shortcake
This recipe uses butter and flour for thickening, so if you’re a
strict low GI dieter, you might not want to make this, or try a
substitute for the flour for thickening. I always served it over hot
biscuits. On a low GI diet, the biscuits should be made with whole wheat
flour or it could be served over 100% whole wheat toast.
1/2 to 1 cup diced
mushrooms
¼ cup chopped green
pepper
¼ cup (4 tablespoons)
butter or margarine
3 tablespoons flour
1 beaten egg yolk
2 to 2 1/2 cups
diced, cooked turkey
2-ounce jar chopped
pimento
2 cups milk
Salt and pepper to
taste (I use 1/2 teaspoon salt and 1/4 teaspoon pepper)
Sauté
mushrooms and green pepper in butter until mushrooms are lightly
browned. Add flour and blend. Add milk and seasonings. Cook until thick,
stirring constantly.
Beat
egg yolk in a small bowl. Mix some of hot mixture into egg yolk, and add
to remaining hot mixture. Continue cooking until thick, stirring
constantly. Add turkey and pimento. Six servings.
Variations:
Omit mushrooms and
increase green pepper to ½ cup.
Use less butter (3
tablespoons).
To reduce calories
and fat, and still be "creamy," try skim milk mixed with fat-free half &
half.
MizFrog’s note: This is an old and good recipe, given to me by my
high school home economics teacher. It’s one of the best ways to use
leftover Thanksgiving turkey—I’ve made it after almost every
Thanksgiving for many years. I also make it occasionally at other times.
