Phase 2 Vegetable Recipes

 

Zucchini  

Zucchini Spears

3 tablespoons herbed flavored (whole wheat) crumbs*
1 tablespoon parmesan cheese
1/4 teaspoon garlic salt or salt
1/8 teaspoon pepper
2 medium unpeeled zucchini or yellow squash
2 teaspoons oil
2 tablespoons water

Preheat oven to 475 degrees F. Combine crumbs, parmesan cheese, salt, and pepper and set aside. Quarter zucchini lengthwise to make 8 spears. Place zucchini spears, oil, and water in plastic bag or dish with tight-fitting lid; toss to coat. Roll each spear in crumb mixture. Arrange on greased cookie sheet or on a rack suspended on cookie sheet. Bake for about 7 minutes.

 

*If you can't find packaged whole wheat crumbs, you can make your own.

Zucchini Pancakes

From a forum.

 

2 cups shredded zucchini

1 egg

1/3 cup oat flour

1/4 cup parmesan cheese*

Black pepper to taste

Cooking spray

 

Beat egg and add the rest of the ingredients except zucchini. Mix well. Add zucchini and fry until brown on each side. You can use either a butter spread or just spray the pan with non-stick spray.

 

*Can use fresh grated, or shredded from a package or other container, or the dry grated style in a can.

 

Note: If you don't have oat flour just process your oatmeal until it’s like flour.
